Menu Creation
Writing a seasonal menu with the chefs at Vesta has always seemed more of a catch up with good friends over coffee, rather than an “official menu meeting”. The conversation usually starts out with questions like, “what’s on your mind?”, “where have you been?”, or “where do you feel like going?”. There are some obvious things to consider, such as the season, locality, and of course the eclectic Vesta concept, but those things aside, its always been important to me to get the chefs talking about ingredients, technique, regions, and flavors. Almost as important are some of the not so obvious; history, travel, and personal inspiration. Ultimately our goal is to tie all of these things together with new and exciting dishes that are better than dishes on the current menu.
